HLB (Hydrophilic-Lipophilic Balance) describes the preferred emulsion type of an emulsifier. Deoiled lecithin powder has an HLB of 7–10, making it significantly more hydrophilic than standard liquid lecithin (HLB 2–4). An HLB of 7–10 favours oil-in-water emulsions (O/W) and good water dispersibility. Practically: deoiled powder is suited to aqueous systems (beverage powders, soups, sauces) and can be incorporated directly without pre-dissolving in fat. For water-in-oil emulsions (W/O) such as margarine, liquid lecithin (HLB 2–4) is more appropriate.
